My typical day starts early, usually around 5:30 am. I believe in the power of a structured routine, so the first thing I do is set my goals and schedule for the day. This helps me stay organized and focused on what needs to be accomplished.

Throughout the day, I prioritize tasks and try to tackle them as efficiently as possible. When I’m working as a personal chef in clients’ homes, I ensure that I have all the necessary ingredients and equipment ready in advance. For events like weddings and parties, I coordinate with the event planners and make sure the menu and preparations are well-planned.

In my role as a corporate chef for a local restaurant group and as a restaurant consultant, I often have meetings with restaurant owners and managers. These discussions allow me to understand their specific needs and challenges, and I work collaboratively to find solutions.

Proper hydration is essential for overall health and well-being. It helps maintain energy levels, concentration, and cognitive function. In a high-pressure environment like a kitchen or any demanding profession, staying hydrated can make a significant difference in your performance and productivity.

I suggest carrying a reusable water bottle with you and making a conscious effort to take sips throughout the day. It’s a simple yet effective habit that can benefit your physical and mental health. To overcome this, I had to make the difficult decision to leave these positions. It wasn’t easy, as it often involved admitting that I had made a mistake in my career choices. However, I realized that staying in a job that wasn’t the right fit was detrimental not only to my professional satisfaction but also to my overall well-being.

The key lesson I took away from these experiences was that more money or superficial perks should not be the sole factors in evaluating a job opportunity. I’ve always dreamed of opening a Filipino family-style restaurant that not only serves delicious food but also encapsulates the warmth and togetherness of those special moments I experienced growing up.

In this restaurant concept, the focus would be on creating an atmosphere where guests feel like they’re part of a family gathering, sharing a meal filled with love and tradition. The menu would feature authentic Filipino dishes that evoke a sense of nostalgia and comfort. From classic adobo and sinigang to beloved desserts like halo-halo, the goal would be to transport diners to the heart of Filipino cuisine.

To make this idea a reality, here are some key elements I envision:
